Make it Monday

I know you've missed "Make it Monday" and I've missed posting it.

Banana Split Cake

1 package of pie crust for two pies (I used Pillsbury)
2 sticks butter
2 cups powdered sugar
2 eggs
1 tsp vanilla
Bananas (how many depends on how much you like bananas)
1 or 2 cans of crushed pineapple (again depending on how much you like pineapple)
16 oz Cool Whip
Maraschino cherries (optional)



In a 9x13 dish bake pie crust according to directions. The crust will overlap in some places. Let cool completely.


In you mixer (I just love mine!) cream together butter and powder sugar. Add eggs and vanilla. Mix for about 15 to 20 minutes...yes, really that long (more on this later).

Add mixture to pie crust. Slice bananas and lay on top of mixture.

Drain pineapple and then add on top of bananas.


Top with Cool Whip. Then if you choose to add the cherries you would do that on top of the Cool Whip (I forgot to buy some). Refrigerate and enjoy!

***Just a few notes. My mom has been making this forever! The original recipe called to beat the mixture BY HAND for 20 minutes. Just imagine. Well Mommy and I finally discovered that you could let the mixer do the work; SO much easier. The original recipe also called for two packages of Dream Whip, but we found that Cool Whip works just fine. With these changes it has made making this recipe so much faster. Now I can whip it up in no time!
