When I organized my Kraft recipes I came across the recipe for the mini meatloaves and when Rondell was looking at my binder he saw it too...and the rest is history.
Mini Meatloaves
1lb ground beef
1 box of Stove Top Stuffing
1 cup water
1 tsp garlic powder
BBQ sauce
Shredded cheese
Combine hamburger, stuffing and water.
Spoon mixture into muffin tins. I used a measuring cup or if you have a big enough cookie scooper, you can use that too.
Make an indentation into each loaf and add BBQ sauce in the indent (Sweet Baby Ray's has a nice squirt bottle that made it very easy to add the sauce).
Bake at 375 for 30 minutes.
Add shredded cheese to top of each loaf and bake for another 5 minutes.

Ohh I saw this one, in one of the kraft mags! I never made it though! This makes me want to make it!! YUM!
What do you serve it with? Rice? Mashed taters?
(I know, silly questions. But, as my husband would say, I don't make a lot of "simple" dishes. I always fancy up my meals, too much. And he is DYING for a simple recipe. haha. I can't help it, though! My daddy is a chef, and he taught me all I know! ah!)
What a cute alternative to regular meatloaf. I love this idea and plan to try it!!
So I made these last night! :) Andy loooved them! LOVED them! :) And the boys ate them, too. So it was a huge success! Thanks for the inspiration!
