I Did It...I Did It
I froze a meal! One of my goals is to cook more often and find a balance regarding working and caring for my home. I thought I'd try freezing meals so that when there are times that I don't have time to cook a wholesome meal I'll have some on hand.
Last night I made lasagna...x2. I used the ingredients for an entire pan but split it into two containers. I assembled the lasagnas but just did not cook them...just covered them with aluminum foil. I will just put one in the oven tonight when I get home from work (it's waiting for me in the fridge) and I froze the other one.
I am so excited about this and can't wait to see how it all turns out. I think next I'll try this when I make potato soup this weekend.

Kelli, freezing meals is near and dear to my heart. I buy 15-20 lbs. of ground beef when it's on sale and precook it all, then freeze it. Instant beef for tacos, spaghetti sauce, sloppy joes, cheeseburger bake right at my fingertips.
Sometime I make up a big batch of sloppy joes and we eat a meal that night and I freeze enough for two other meals. I do this with pulled pork too...talk about doubly easy, because you cook in the crock pot all day.
Spaghetti freezes really well, pretty much any pasta dish does, so I freeze home made mac n cheese and three cheese Italian turkey bake too.
I also make up a couple of meatloaves every so often and freeze them. Sure makes life simple when you need it.
Investing a few hours a month in building freezer meals saves you so much time later, but more importantly, lets you eat well and relieves stress.
Yay! You did it!! You will have such a feeling of accomplishment when you pull out that frozen lasagna one night when you don't feel like cooking and provide a great dinner for your family!!

I used to freeze dinners. I even used to go to a food-prep place where you could make 8 dinners for $80 and put them in the freezer. It was fabulous! Alas, all the places like that around here have closed. :o(

I need to do this too...my only problem is that my freezer is way too small! I do brown hamburger meat and freeze it, which makes a lot of dinners much easier!
Wow Kelli! Good for you! That has to feel so good to have that done! I love preparing meals ahead of time. Such a sense of accomplishment and so awesome when it is time to eat them and it doesn't take any effort!
I should do this too, but I never have. I love lasagna...sounds super yummy for tonight!

You are adorable! So proud of you for doing this, it does make your life easier! I actually go to a local place that has a prepared monthly menu and they put all the ingredients together and freeze it for you! Then, you just let it thaw, put ingredients together and bake!

That's great! It is sooooo nice to just pull something homemade out of the freezer and put in the oven. I don't make ahead often enough, but I love it when I do!

I need to do this! Every once in awhile when I'm making lasagna or another casserole type dish, I'll just double it and freeze it. But I don't do it near often enough. And lately I'm always at a loss as to what to cook for dinner. It'd be so nice just to pull something from the freezer.
I have tried it in the past but always forgot about it or ended up with freezer burn - it didn't work for me....
But I know it does for tons of others so that is awesome!!!!

Just stumbled upon your blog, it's very nice. Yes, I freeze meals to use later quite a bit. It is so nice to know that I don't "have to cook" some days.
You go, girl! Lasagna freezes so well. I should do more freezer meals, it would sure make life easier. I'm doing a pantry challenge this month, and might have to incorporate freezer meals in it, too!
