She just started doing a series called Back to the Basics and I have decided to participate. Her first "challenge" is to create a family mission statement. She gives tips on how to create one and even has 20 questions for you and your spouse to answer in order to give you some guidance. Rondell and I are going to have a date soon to answer these and come up with a statement fitting to our family (#71 on my list).
This week's "challenge" is menu planning. I have struggled with trying to do this for quite a while (which is why it is #6 on my list), so I was excited to see this in the series. With that I have planned out our meals for the next week. Here it is:
Sunday: Dinner with friends (I lucked out!)
Monday: Pot roast, mashed potatoes, green beans, rolls
Tuesday: Leftovers
Wednesday: Hamburgers and Hot dogs, with strawberry shortcake for dessert (we have friends coming over)
Thursday: Chicken enchiladas
Friday: Frozen pizza
Saturday: Easy dinner (mac and cheese or sandwiches)
I'll let you know how I do.

Sounds like a great menu! Heading to check out the Simple Mom.
I'll have to check out her site. Sounds like a great idea!
Can I come over for dinner on Wednesday? Pretty please?
Good luck! Planning dinners in advance is one of my biggest challenges too! Those sound like tasty dinners though!
The menu looks great. We are big menu planners. I plan out lunch and dinner each week before I go to Walmart. As we have a rule we can only go to the store once a week no matter what. The back to basics sounds like a great idea.
Hi Kelli!
That sounds like a wonderful site! I love the idea of a mission statement! And your menu sounds so tasty!
XOXO
Jen
Good luck! I'm pulling for ya!
