I did it! I made potato soup (using this recipe...Hi Summer, if you're reading)...AND it was good! It was thick, like I love it, cheesy and all around good.
I pretty much followed Summer's recipe, except I cut up and boiled my potatoes first and I used white onion instead of green onion.
I will say...when you make this (because you really should) note that when you add the milk and then have to stir constantly till it thickens and bubbles, it takes a little while. Don't be discouraged...keep stirring (I used a whisk), it's SO worth it.
Let me know if you try it. My friend Kristina (hey Kris!) is making it tonight too. ENJOY!

Warm soup on a cold day...perfect!
Yay! I made the blog...I made the blog! I made the soup but it was too late to eat it (so I just sampled a bit). It tastes great and I look forward to eating it for dinner. I might need to add more cheese. Yours look pretty cheesy...hmm...
miss kelli! oh thanks so much for trying my soup- you're the best! but i owe you a huge apology because i'm too late with my answer to the green onion question! ugh. i am so sorry. for future reference, this is how my mother-in-law taught me to handle green onion:
1. cut off the top 1/2 inch of the green section and the very bottom of the white section.
2. then chop from the green all the way down through the white- you can use it all. in fact, the white part is where you get the most flavor! (i never would have guessed.)
was the soup delisch? oh man, i hope so.
ps. thanks (as always) for popping in and saying hi in my comments- i always love it!
Kelli, that soup looks delicious. I've been home sick with a nasty cold for a 10 days and I need soup :)
Love your blog. It's so much fun to have see pics and read "this and that" about families all over the country. You have a very sweet tone in your writing.
Thanks so much for stopping by and visiting my laundry room redo. I have to admit that I like doing laundry a lot more now than I did before. It's amazing what a little paint and a few decorations will do to increase my zest for chores.
Yummy! You make the best things Kelli!
XOXO
