Random Update

Today was kind of a random day. I did a lot of little things to fill the day...productive. First, Rondell and I worked on the basement. We started last night and continued with more today. To look at it right now it doesn't look like we've done much, but we've thrown out 3 bags of trash, moved like-things together, emptied boxes and cleared a few shelves. I'll take some pictures tomorrow and update you on our progress on Monday.

Then I watched the OSU vs. Navy game. O-H-I-O...Go Bucks. I'm so excited that college football season is back in full swing. There's nothing like spending a Saturday watching the games. College football has become my favorite over NFL (sorry Ron).

Then I made dinner and I finally think I have found a chicken enchilada recipe that suites my taste. I don't know if I've shared before but I LOVE chicken enchiladas (with flour tortillas) and I am always on a mission to find the perfect recipe. Tonight I made a chicken enchilada bake similar to this one but with some changes that I used from another recipe. I didn't use any cream soups, instead I used cream cheese and sour cream. I also used an onion, which next time I will let cook a little more first because while I like the taste of onion I don't exactly need to know it's there. So, here's what I did:

I boiled my chicken breasts for about 15 minutes and shredded. I cut up about 8 flour tortillas into squares and lined them in my glass dish. Then I sauteed (don't you just love that word) about a 1/4 of an onion (longer next time). I added a can of diced chilies, about a block and a 1/2 of cream cheese, a few spoonfuls of sour cream (sorry, I didn't measure) along with some spices (garlic, salt, pepper, red pepper flakes and chili powder). After the cream cheese melted I added my chicken to let it all warm through and then added it on top of my tortillas.

I topped it with cheese (cheddar and Monterey jack) and baked at 350 for about 20 minutes. It was yummy!

Next, I did a few crafty things. My Stampin Up! rep gave me tabs to label my catalog and I finally put them on and put the catalog in a binder...my wonderful Rondell cut off the binding and three-hole punched it for me! Of course then I had to flip through it and mark things I want to buy.

Lastly, I started on my Destin scrapbook. What I would like to do is have one book that documents all of our trips to Destin because we plan on going every year. So I started with the cover page. I used my Cricut to make the letters (so easy!). Here's what it looks like so far:

I'm not sure if I like it. I have to let it sit and see how I feel. I think I should have left off the sticker at the bottom. I also don't know if I like the colors of the lettering. Overall I want it to say Destin at the top and then have a picture of our view from our condo's balcony. I'm pretty simple so I would like it to be simple as well with a few embellishments. This is where I get slightly frustrated because I love doing stuff like this but I'm not overly creative...the ideas don't just come to me. I might look online and see what else I can find. I'll keep you posted on this little project.

hmm, that sounds good. except for the tortillas, i could eat that. i wonder what would happen if you baked it without the tortillas. maybe beans in salsa on the bottom?

would that be good?
