My blog friend Joanna is doing this new thing call "What's for Dinner Thursday!" I've participated once before and I'm working on participating each week. It will keep me focused on making better meals instead of nuggets and fries.
Today's Recipe: Stuffed Shells with Meat Sauce
1 box jumbo shells2 jars of Ragu (though, I may only use 1 or 1 1/2 jars next time)
1lb. of hamburger
2 bags of mozzarella
15oz of ricotta cheese
1 small tub of small curd cottage cheese (optional, I just love cottage cheese with my baked dishes)
Seasoning (I used Italian seasoning and a garlic/pepper blend...I'm sure you can use fresh herbs or other seasons to your liking.)
Boil shells as directed on box, let cool.
Brown hamburger, drain and add sauce. Let simmer.
In a bowl, combine 1 bag of mozzarella, tub of ricotta cheese, tub of cottage cheese and seasoning.
Spread some of the sauce on bottom of 9x13 dish.Stuff shells with cheese mixture and line in dish...as seen below:
Bake at 350 for 30 minutes.
Enjoy!

What time would you like me to be over for dinner? I love all things Italian :) The best part about making it is that I get to eat leftovers all week. Enjoy~
