Mexican Food Night

If you've been reading this blog for a while you know my love for Mexican food (and my quest to find the BEST sour cream chicken enchiladas!). Last night some friends came over and when we arranged the date I decided that I would do a Mexican food theme. My sweet Jamison got into it as well and even checked out a book from her school library on how to prepare Mexican food.

On the menu: hard/soft tacos, cheese quesadillas, steak fajita meat (I'll post the recipe later...super easy), pico de gallo, guacamole and chips...and for dessert, apple crisp (you can see that recipe here).

First Jamison and I made pico de gallo and guacamole using The Pioneer Woman's recipe...here:

Jamison made a sign for the door...I love her enthusiasm about things.

Robert & Amanda and baby Robert...we really love these guys. They used to go to our church, that's where we met them, but now they go to a church closer to their home. We don't get to see them nearly as often as we would like.

I was very excited not only to have Robert & Amanda over, but I was also excited because they enjoyed my food (am I the only one who gets nervous about that?). Robert had four plates of food and then above is what he had for dessert...apple crisp topped with vanilla/chocolate ice cream and chocolate sauce. I think he enjoyed himself...that makes me happy!

Their daughter Abigail is the same age as Jamison and these two are like two peas in a pod.

Their daughter Emily is about a year older than Caleb but they played very well together. Emily even came back in the door to give him another hug before leaving.

There were quite a few silly moments.

Here's Caleb telling baby Robert that "it's going to be a little OK" because he was crying.

We have a fun night and can't wait until we can see them again!

Looks like a great family fun evening! :) I love Mexican food, too. I have to say that Italian is my all-time favorite, but Mexican is a really close second.
